HOW TO MAKE GRILLED CARP

 


INGREDIENTS

  • 2 pieces (800g) of carp fish
  • 2 tsp Lime Juice
  • 1 tsp Salt
  • 1 tbsp Tamarind Water
  • 5 tbsp Sweet Soy Sauce
  • 3 Tbsp Oil for sautéing


GROUND SPICES

  • 3 Large Red Chilies
  • 4 Curly Red Chilies
  • 2 Red Cayenne Pepper
  • 6 Grains of Red Onion
  • 3 cloves garlic
  • 2 tsp Coriander
  • 2 cm Ginger
  • 1 tsp Salt


SOY SAUCE INGREDIENTS

  • 5 tbsp Sweet Soy Sauce
  • 1 Tomato, remove seeds, cut into slices
  • 5 Red Cayenne Pepper, sliced
  • 5 Green Cayenne Pepper, sliced
  • 2 Red Onions, sliced
  • 1/2 tsp Lime Juice

HOW TO MAKE

    1. Marinate the carp in lime juice and salt. Let stand 15 minutes.
    2. Heat the oil. 
    3. Sauté spice paste until fragrant. Add tamarind, stir well. Lift, add sweet soy sauce, stir well again.
    4. Brush the fish with seasoning.
    5. Grill the fish while rubbing the remaining spices until cooked.
    6. Serve with the soy sauce.

              HOW TO MAKE ACEH NOODLES




              INGREDIENTS

              • 500g Wet/Yellow Noodles
              • 150g Fresh Shrimp, peeled off the skin
              • 150g Braised Beef/ Goat, thinly sliced
              • 1 Tomato, cut into triangular lengths
              • 5 Red Onion Cloves, thinly sliced
              • 4 Cloves Garlic, thinly sliced
              • 100g White Cabbage, finely sliced
              • 100g Fresh Bean Sprouts, tails removed
              • 25g Onion Leaves, thinly sliced
              • 10g Celery, finely sliced
              • 600ml Beef Broth (from beef stew)
              • 2 tbsp Sweet Soy Sauce 
              • 2 tbsp Soy Sauce
              • 4 tbsp Frying Oil


              GROUND SPICES


              • 7 Red Chilies
              • 5 cloves garlic
              • 1 cm Ginger
              • 3 Roasted Candlenuts
              • 1/4 tsp Roasted Coriander
              • 1/4 tsp Roasted Cumin
              • 3 Grains Roasted Anise
              • 3 Grains Cardamom
              • 1/2 cm Fresh Turmeric
              • 1 tsp White Pepper Powder


              COMPLEMENTARY INGRIDIENTS

              • Belinjo crackers
              • Pickled cucumber


              HOW TO MAKE

                1. Heat oil, saute sliced shallots, sliced garlic, and ground spices until fragrant and cooked.
                2. Add the meat, then shrimp and stir until smooth.
                3. Add broth, let it boil, then add cabbage, spring onion, and celery and salt. Cook until the broth water is slightly reduced.
                4. Add bean sprouts and tomatoes, then add sweet soy sauce and soy sauce.
                5. While waiting for the seasoning to boil, in another place brew the wet noodles with hot water, drain, then put them in the seasoning earlier, stirring until well mixed.
                6. Ready to serve, serve while still hot with belinjo crackers and pickled cucumber.
