INGREDIENTS
- 500g Wet/Yellow Noodles
- 150g Fresh Shrimp, peeled off the skin
- 150g Braised Beef/ Goat, thinly sliced
- 1 Tomato, cut into triangular lengths
- 5 Red Onion Cloves, thinly sliced
- 4 Cloves Garlic, thinly sliced
- 100g White Cabbage, finely sliced
- 100g Fresh Bean Sprouts, tails removed
- 25g Onion Leaves, thinly sliced
- 10g Celery, finely sliced
- 600ml Beef Broth (from beef stew)
- 2 tbsp Sweet Soy Sauce
- 2 tbsp Soy Sauce
- 4 tbsp Frying Oil
GROUND SPICES
- 7 Red Chilies
- 5 cloves garlic
- 1 cm Ginger
- 3 Roasted Candlenuts
- 1/4 tsp Roasted Coriander
- 1/4 tsp Roasted Cumin
- 3 Grains Roasted Anise
- 3 Grains Cardamom
- 1/2 cm Fresh Turmeric
- 1 tsp White Pepper Powder
COMPLEMENTARY INGRIDIENTS
- Belinjo crackers
- Pickled cucumber
HOW TO MAKE
- Heat oil, saute sliced shallots, sliced garlic, and ground spices until fragrant and cooked.
- Add the meat, then shrimp and stir until smooth.
- Add broth, let it boil, then add cabbage, spring onion, and celery and salt. Cook until the broth water is slightly reduced.
- Add bean sprouts and tomatoes, then add sweet soy sauce and soy sauce.
- While waiting for the seasoning to boil, in another place brew the wet noodles with hot water, drain, then put them in the seasoning earlier, stirring until well mixed.
- Ready to serve, serve while still hot with belinjo crackers and pickled cucumber.
